It’s been two days since my last update. I know, I’ve been slacking… I’ve fallen behind!! Please forgive my flighty lack of commitment.
But I am here now… and I come bearing an update on whole dairy products.
As of the last 3 days, I’ve been consuming whole dairy: Harmony Organics Whole Milk and L’Ancêtre Raw Cheese in small/normal quantities. Not excessively. Say, one glass a day or one slice of cheese.
My findings are that… being lactose intolerant, these two products sit perfectly fine with me. I am so lactose intolerant that Natrel 2% milk would send me to the bathroom in matter of minutes, followed by a sluggish body for the remainder of the day. However, Harmony Organics Whole Milk does not upset my stomach or digestion by any means. For me, this is great news!
Oh… and we mustn’t forget to mention the absolute exquisite flavour. That of an unbelievably rich and creamy texture.
Ice cream? Cheesecake? Eat your heart out! Whole Milk is taking the cake, fellas
Now, as far as dairy’s role in the paleolithic diet is concerned… is very much up for debate. Everywhere one looks one finds conflicting arguments. I believe this is one of those aspects that is entirely up for personal exploration. You really can’t take anyone’s word for it, and why would you? It’s your life… it’s your body… EXPLORE IT!
Now, onto my coconut bread.
Apparently if you leave this stuff out on the counter it will begin to turn after the third day. *shrug* I didn’t eat it at this point, just the smell gave it away. So, for future reference my next batches will always go straight into the fridge. Must be due to the large quantity of eggs, I speculate.
In regards to coconut bread, I will be making two more recipes tonight. One will be a variation of my first batch.
The variants will be:
- Ghee in place of Coconut Oil
- No Honey
As well, the other recipe will be a sort of “crepe” or “flatbread” made on the skillet. It will be consisting of:
- Ghee
- Eggs
- Coconut Flour
- Cumin and Corinader
- Whole Milk
If you haven’t guessed it by now… I will be attempting to create a Coconut Flour Naan-style bread. I love home-made Baba Ghanouj! Besides, celery and carrot sticks just aren’t the same to dip with as fresh, buttery Naan. Mmmm.
I will post a full review of these recipes at a later date.
